Easy chocolate birthday cake

Ingredients

For the cake

• 100g/3½oz unsalted butter
• 250g/9oz caster or brown sugar
• 50ml/2fl oz sunflower oil
• 25g/1oz cocoa powder
• 2 tsp vanilla extract
• 4 medium free-range eggs
• 80ml/2½fl oz milk
• 100ml/3½fl oz double cream
• 300g/10½oz plain flour
• 3 tsp baking powder

For the cocoa frosting

• 25g/1oz cocoa powder
• 300g/10½oz icing sugar
• 50g/1¾oz butter
• 50ml/2fl oz double cream

For the filling

• 250ml/9fl oz double cream, whipped until stiff peaks form when the whisk is removed
• 150g/5½oz jam

Method

1. For the cake, line the base of a deep 20cm/9in cake tin with non-stick paper and preheat the oven to180C/350F/Gas 4.
2. Melt the butter over a low heat in a small pan, pour it into a bowl with the sugar, oil, cocoa powder and vanilla. Beat well until smooth, then whisk in the eggs followed by the milk and cream.
3. Sift the flour and baking powder into the butter mixture and beat until smooth, then spoon into the prepared tin and cover the top of the tin with aluminium foil.
4. Bake for 30 minutes, then remove the foil and bake for a further 20 minutes, or the top is springy and a skewer inserted into the middle comes out clean.
5. Remove the cake from the oven and set aside to cool completely.
6. Meanwhile make the cocoa frosting, mix the cocoa powder and icing sugar in a bowl. Melt the butter for a few seconds in the microwave, or in a small pan over a low heat. Mix the melted butter and the cream into the sugar and cocoa, and stir until smooth.
7. To assemble the cake, remove the cake from the tin, trim the top of the cake to make it flat, then cut the cake in half horizontally. Put the bottom half of the cake onto a serving plate and spread with the whipped cream. Top with the jam.
8. Spread the cocoa frosting onto the top of the cake and swirl it with a spoon, then carefully place it onto the bottom half of the cake.

Husband gifts wife Amazon package box for her birthday – but there’s a twist

Leaving behind cliche cakes shaped like Louis Vuitton bags, high heels and Tiffany boxes, a witty husband surprised his wife with a custom cake shaped like one of her very favourite things - an Amazon package.

For her 39th birthday, photographer Emily McGuire blew candles on the Amazon delivery-shaped cake with true-to-life edible details such as a personalized shipping label and Amazon Prime box tape, Today Show reported on Thursday.

“As soon as I saw the cake, I was like, ‘He gets me’. I felt so understood!” the report quoted the photographer from North Carolina as saying.

McGuire’s love for the world’s largest online retailer runs deep and she clicks the “Add to Cart” button at least three times a week, the report said.

Meghan Markle will have to return most of her birthday presents this year

It's Meghan Markle's birthday today and millions of well wishers have already bid her the best day.

But unlike most of us, the 38-year-old will have to return many of the presents she receives. And she had to do the same with her wedding gifts.


Although her first birthday spent as mum to Baby Archie will already be super special, Meghan has to be very careful about the presents she accepts and there are lots of rules to follow, reports the Mirror Online.

Last year she spent her birthday with her husband Prince Harry at his close friend Charlie van Straubenzee's wedding in Surrey.

But with a little one to look after now, we're sure this time round it will be a little quieter.

She walked through her entryway while Stormi Webster, Jenner and Scott’s one-year-old daughter, played with rose petals in the background.

The founder of Kylie Cosmetics seemed pleasantly surprised and overjoyed by the sweet gesture. “Stormi, look at this,” she said with a laugh. Jenner also showed more of the incredible scene in her house on her Instagram Stories.

Universal Orlando is building a 4th theme park in Florida, and it's called Epic Universe. Here's what to know.

A new theme park is coming to Universal Orlando Resort.

Universal's Epic Universe was announced Thursday morning at the Orange County Convention Center during a press conference in Orlando, Florida. The new park, on which construction has already begun, will transport guests to several new lands based on "beloved stories," the company says.

"Our vision for Epic Universe is historic," Universal parks and resorts' CEO, Tom Williams, said in a statement to INSIDER. "It will build on everything we have done and become the most immersive and innovative theme park we have ever created."

A man was fined $123,000 for renting out his central London apartment to tourists on Airbnb

A man has been fined £100,000 ($123,000) for renting out his central London council apartment to tourists on Airbnb.

In the UK, council properties are managed by the government and distributed to people in need. Most are gifted, or rented at a subsidized rate, so it's illegal to sublet them.

Westminster City Council said that Toby Harman, 37, had made £100,974 ($124,302) in profits from 300 bookings at his Victoria apartment since 2013.

Harman wrote on Airbnb that his "cozy studio apartment in Victoria" also had a hot-tub.

Council member Andrew Smith said: "Social housing is there to provide much-needed homes for our residents, not to generate illicit profits for dishonest tenants."

It’s happy birthday to everyone with this rainbow sprinkle icebox cake

Everyone’s favorite birthday cake gets an icebox makeover. Shortbread cookies are layered with sprinkle-studded cream-cheese-and-whipped-cream frosting and assembled in a springform pan. The cream cheese helps to cut down on the sweetness and adds a lovely tang to the cake. Once released from the pan, the entire cake can be coated in more sprinkles.

A cake this festive calls for a scoop of ice cream on the side.

Recipe notes: The cake will keep loosely covered with plastic wrap in the refrigerator for up to 3 days, or frozen, after it has set up in the refrigerator, tightly wrapped in plastic wrap and aluminum foil, for up to 1 month. Defrost the cake in the refrigerator overnight before you plan to serve it. Once you cut the cake, leftovers can be wrapped in plastic wrap and refrigerated, and are best within a day.

Nonstick cooking spray or softened butter, for the pan

1 1/2 cups (340 grams) cream cheese, at room temperature

3 cups heavy cream

1 cup (200 grams) sugar

1 tablespoon vanilla extract

1 1/2 cups (225 grams) rainbow sprinkles, plus more for decorating (optional)

80 (560 grams) thin shortbread cookies, preferably Lorna Doone

Step 1

Grease the sides of a round 9-inch springform pan that is 3 inches deep with cooking spray or softened butter. Line the sides with a strip of parchment.

Step 2

Add the cream cheese to the bowl of a stand mixer fitted with the whisk attachment. Whisk on medium speed, about 3 minutes, until smooth. Add the heavy cream, increase the speed to medium-high and continue to whisk until incorporated.

Step 3

Add the sugar and vanilla, and whisk the mixture, about 3 to 5 minutes, until it holds stiff peaks that stand upright when the whisk is raised. Use a rubber spatula to fold in the rainbow sprinkles and mix just to incorporate.

Step 4

Spread a thin layer of whipped cream (about 1 3/4 cups) on the bottom of the pan and cover with a layer of cookies, filling any gaps with broken cookies (breaking them yourself, if necessary.) The pieces should touch; the goal is a solid layer of cookies. Continue layering until you reach the top of the pan, ending with a layer of cream.

Cover the top of the cake with plastic wrap and place in the refrigerator for 6 to 8 hours, or overnight.
